Process: On capture, prawns are thoroughly washed in clean seawater to remove all mud, silt and other debris and are then dipped with metabisuphite (E223) to prevent melanosis. Quality, intact prawns are placed into 3kg leak proof waxed boxes and placed in a blast freezer at temperature of down to -40ºC until their core temperature has reached at least -18ºC After blast freezing, prawns are glazed, with potable (drinkable) fresh water or clean seawater to help retain moisture, presentation and binding, not for any weight gain. The inner cartons are then placed in 9kg outer and placed into a storage freezer, where the core temperature of the prawns should be maintained at -18ºC.
Product should be stored at minimum -18ºC and has a best before date of 18 months from date of first freezing.
Sizes per kg: 0/5, 6/10, 11/15, 16/20, 21/30 (fingerlaid) > 30/40, 40/50 (scrambled).
